Simple Tuscan Panzanelle Salad


Simple Tuscan Panzanelle Salad

Use day old bread, coated in olive oil and salt - grill it till you see marks (this could be done on bbq or griddle pan.) I use 4-6 slices depending on the size of the salad.

Salad Mix:

  • 2 parts roma tomato - quick oven fire roasted in olive oil, garlic, salt
  • 2 parts chopped cucumber
  • 1 part chopped red onion
  • clove garlic 
  • chopped basil 


Dressing:

  • 1 part vinegar (mix balsamic and white together)
  • 2 parts olive oil
  • sea salt
  • pepper
  • Capers - 2 tbsp


Mix all together. Wait 15 minutes for bread to soak in the juices. 

Enjoy.
