Simple Tuscan Panzanelle Salad Use day old bread, coated in olive oil and salt - grill it till you see marks (this could be done on bbq or griddle pan.) I use 4-6 slices depending on the size of the salad. Salad Mix: 2 parts roma tomato - quick oven fire roasted in olive oil, garlic, salt 2 parts chopped cucumber 1 part chopped red onion clove garlic chopped basil Dressing: 1 part vinegar (mix balsamic and white together) 2 parts olive oil sea salt pepper Capers - 2 tbsp Mix all together.
